Somehow yesterday was February 3rd, and 55° and sunny outside. I had every intention of going for a much needed long walk. I put on my exercise clothes and low and behold, I changed my mind and made DARK CHOCOLATE RYE COOKIES instead. And I wonder why it is that my clothes are too tight. But it’s been a strange week and yesterday seemed to call for some decadence.
This recipe comes from one of my favorite blogs. I highly recommend you check it out, she is really hilarious in her writing, with plenty of vulgarity and pit stops mid-recipe for adult cocktails, so not for the faint of heart. I had previously made one of her chocolate chip cookie recipes and it was hands down the best chocolate chip cookie I’ve ever had in my life! So when she posted this one, I was eager to try it. With plenty of rye flour on hand from my recent excursion with rye bread, I knew it was meant to be.
I was hesitant at first because when I mixed all of the ingredients together, it looked kind of GRAY. Who in the heck wants a gray cookie? But I kept mixing and the most lovely dark chocolate color emerged, what a relief! My cookies turned out a lot “puffier” than I expected, but the flavor is deep, dark, intense and delicious!
Beer Pairing
Fireside Chat by 21st Amendment Brewery seemed like a no brainer when it came to a pairing for these cookies. With a relatively low IBU of 45, the malty flavor, cocoa nibs and spices, make this match feel like kismit. The 7.9% ABV surely helps warm you up….fireside. (Sorry, I couldn’t resist!) Seriously, these cookies and beer just scream for a cozy snuggle with your loved one.
Music Pairing
Lance, who is always full of good ideas, suggested that I also offer a music pairing suggestion in my posts. Which is a very natural fit in our house since there is typically some tunes playing (thanks to our super sweet Sonos speakers, which have changed my life!). I will hopefully delegate the music selection to Lance in the future, since he is my most trusted DJ. But today, I decided to start simple and just suggest what I was listening to while I made these. 1989 by Ryan Adams. That’s right folks, Ryan Adams singing the complete Taylor Swift album. Listening to it is such a guilty pleasure of mine, so what better than that to pair with these total guilty pleasure cookies.
